The Recipe
Ingredients:
- 2 pork belly slices
- 1 stalk green onion whites
- 2 knobs of ginger
- 1 tbsp salt
- 1 tbsp cooking wine
- Pho noodles
- Lettuce
Dressing Ingredients:
- 1 shallot
- 1/2 cup cilantro
- 2 tbsp toasted rice powder
- 1 tbsp Jeow Bong
- 2 tbsp fish sauce
- 2 limes
- 1/4 cup pineapple juice
- 2 tbsp sugar
- 1 tbsp sweet soy sauce (can sub regular soy sauce)
- 1/4 cup oil from pork belly
How to make it:
- 1) Boil pork belly in ginger, green onion, salt, and cooking wine for 30 mins then pat dry.
- 2) Sear pork belly on all sides until crispy/charred, then slice.
- 3) To make the dressing, add all the dressing ingredients along with the noodles, and give a good mix.
- 4) Assemble the pork in a bowl with the noodles and serve with a side of lettuce + enjoy!
